cook the rice like you normally would. then when cooked let cool, rice must be cold to work properly. when cold add a little oil to rice and onions, chopped small, peas, grated carrot, rinsed.celery for texture again, chopped small. mix all of this in abowl with the rice. when ready to make, make sure your wok or frypan is hot with just enough oil to barely cover the bottom.(chinese 5 spice is great in this dish) when pan and oil is hot add the rice mixture, stir and fold constantly until vegetables are cooked thru, should only take 2-3 minutes.serve.for royal fried rice just add eggs you have scrambled and cooked ahead of time they will warm up with the rice.Good Luck hope this helps you out.
