cook the rice like you normally would. then when cooked let cool,rice must be cold to work properly. when cold add a little oil to rice and onions,chopped small,peas,grated carrot,rinsed.celery for texture again,chopped small. mix all of this in abowl with the rice. when ready to make,make sure your wok or frypan is hot with just enough oil to barely cover the bottom.(chinese 5 spice is great in this dish) when pan and oil is hot add the rice mixture,stir and fold constantly until vegetables are cooked thru,should only take 2-3 minutes.serve.for royal fried rice just add eggs you have scrambled and cooked ahead of time they will warm up with the rice.Good Luck hope this helps you out.

Kao Pad kai (Fried Rice with Eggs) Prepare: 1 cup steamed rice 1/4 cup slice scallion 1 egg (beat) 1/4 cup sliced pork 1 tbsp. fish suace 1 tbsp. oyster sauce 1 tsp. soy sauce 1 tsp. Thai pepper 1 tbsp. olive oil 1 tbsp. minced garlic Sauce: 1 tbsp. fish sauce 1 tsp. minced garlic 1 tsp. slice red chili pepper 1 piece lemon Cooking Instructions: 1. Heat the pan and put olive oil or vegetable oil. Wait until it's hot then add 1 tbsp. minced garlic. 2. Put pork and cook for about 5 minutes. Slice the pork in a thin piece will make it cooked faster. 3. Move the pork on the other side of the pan. Put beat egg and stir until it's cooked. 4. Add rice, fish sauce, soy sauce, oyster sauce, Thai pepper then mix well. 5. Turn off the fire. 6. Dress it with cucumber, scallion and tomato. Make sauce by mixing fish sauce, minced garlic and red chili peper. To make the sauce smell aromatic, put crushed coriander roots. You can put lemon juice now in the sauce or later on top of the rice as you like. This Kao Pad Moo can be applied with chicken, seafood or shrimp.

American Fried Rice Recipe (Khao Phat American)---- INGREDIENTS: 2 cups steamed rice 2 tbsp brown raisins 2 tbsp small cubes of onion 1 small cubes of tomato 4 cocktail sausages with ends split to resemble flowers 2 chicken drum sticks 2 eggs 1 tsp ground white pepper 1 tsp salt 2 tbsp ketchup 4 tbsp butter or margarine 4 cups vegetable oil parsley for garnishing PREPARATION: 1. Make two slits on each chicken drum stick. Season with a small amount of salt and pepper Let stand 10 minutes, steam and let cool, then fry in the oil over medium heat until golden brown. Place the fried chicken on a plate. Fry the sausages until the ends of sausages open, then place on a plate. 2. Fry one egg at a time in melted butter over low heat until the egg whites become white. Place the fried eggs on a plate. 3. Fry the onion in the same skillet used for the fried eggs. Add the steamed rice and ketchup, mix and fry together then add the raisins and tomato. Fry and mix again. 4. Season with salt and pepperTurn off the heat. 5. Press the American fried rice in a mold and turn over on serving plates.
